The history of Akash Winery begins with a family — a mom, dad, and son with a vision. A photo of a vineyard, perched on a fireplace mantle 20 years ago, embodied the Patel family dream.
In 2010, that vision took root in the sandy loam of the beautiful Temecula Valley, when they purchased a 20-acre parcel of prime vineyard land.
Little did they know — Nalini, Ray, and their son Akash — that their dream would grow exponentially, just like the vines they planted on Calle Contento.
Willpower and manpower, friends and extended family, helped guide them along the way. A winery and tasting room stocked with award-winning wines, season upon season of events and activities, and the joy of counting loyal customers among their ever-growing family proved to be more gratifying than they could have imagined.
Working alongside renowned winemaker Renato Sais, the Patels craft wines that are both unique and familiar. Two distinct labels, one sourced from their meticulously farmed estate vineyards and the other from neighboring vines, offer something for every palate.
Contemporary, eye-catching labels signify that theirs is not a winery stuck in the dark ages. Rather, it is a vibrant, living dream that continues to grow and evolve over time.
Our artful, lively tasting room and patio opened to the public in 2019. Spirited gatherings, tasting events, and wine club pickup parties fill the space with fun and excitement year-round. 🌟 Décor at Akash Winery
One of my favorite things about the different wineries in Temecula is seeing how each one of them decorates their space! I loved the vibe at Akash Winery. I would describe it as industrial modern/chic. When you walk in you can tell that you are in one of the hottest wineries in Temecula. The decorative touches were perfect! The tables throughout the space encourage you to mingle and meet a new friend or three! One of my favorite decorative elements was the artwork on display. The pieces were beautiful! The outdoor area was my favorite spot! The views of the winery are gorgeous! Comfortable seating and a fire pit, games such a Connect Four and Corn Hole available for you to enjoy plus the views of the sunset were spectacular!

I saved the best for last! The fourth and fifth reasons to visit Akash are two of the wines we tasted – a Sauvignon Blanc and a Rosé! Now, I must admit, I am not an educated wine taster. While others are talking about the different tasting notes, all I can tell you is if I like it or not. I enjoyed their wines, and I also love their label designs!
My Mom (Always5Star) has tasted their wines. I will offer you her expert tasting notes and advice on pairings:
2017 Sauvignon Blanc:
A pale, silvery, straw appearance, light aromas of grapefruit, lime and citrus rinds with hints of herbs provide an intriguing combination. Your palate will enjoy the crispness that lends itself to a refreshing summer wine.
This wine pairs well with fish, shellfish, salads, cheeses, and warm sourdough bread. This young wine will surprise you with its nuances and sophistication. – Always5Star
2017 Parlez Vous Rosé:
An intense, garnet hue with notes of strawberry, watermelon, orange, hibiscus and hints of floral aromas. The wine embodies a sweet and fruity taste with moderate acidity. It lends itself perfectly for a summer picnic or beach party. Tip: You will want to serve this cold as it maximizes the flavors and your enjoyment.
This wine pairs well with spicy brash flavors. I suggest enjoying this with fresh spicy sushi selections. Ahi tuna would be an ideal pairing. – Always5Star

Our Story Began……
Many years ago, before developers discovered Temecula, the valley was dotted with small family-owned farms, orchards and vineyards.
In the 1970’s, Beldon Fields purchased land in Temecula and built replicas of Snow White’s cottage for his wife. Beldon worked for Walt Disney and was one of many artisans who built Disneyland’s Fantasyland and Toon Town. The fairy tale cottage was celebrated as the first home showcased on the Temecula Valley Women’s Club Holiday Home Tour in 1984. There is an old olive tree in front of the cottage that was a gift to Beldon Fields from veteran viticulturist John Moramarco. The olive tree relocated from the Calloway Winery – is one of the largest and oldest olive trees in Temecula, if not in the entire State of California. In the early 1990’s, Les and Dorian Linkogle purchased the beautiful estate from Beldon Fields with the promise to not change the architecture of the cottages. The initial reason for the Linkogles to move to Temecula was to provide open space for their son Larry “Link” Linkogle to ride his motorcycle. For motocross fans, the name Larry Linkogle should sound familiar. Larry is regarded as one of the pioneers of the freestyle motocross sport. He has competed in numerous contests, including the Freeride Motocross Championship, Zero Gravity Festival, NBC Gravity Games and the ESPN X Games. His life story was featured in documentary “Mind of a Demon: The Larry Linkogle Story” which was voted “Best Documentary” at the Slamdance Film Festival and voted best “Jury International Documentary” at the Bel-Air Film Festival. Fast forward to today and you’ll see that Larry is known as the most influential name in the extreme motocross industry. He was voted the most popular extreme natural terrain rider in the world by Fox Sports Blue Torch TV during the 2002 Moto Survival Tour. Larry also set the world’s Long Distance Jump record on his stock 250cc motorcycle and was Vin Diesel’s stunt double in the movie Triple XXX. In 2006, the winery hosted the first freestyle motorcycle biker build-off produced by the Discovery Channel between Larry Linkogle and Mike Metzger. It turned out that the estate location was perfect for growing grapes. So, in the late 1990’s Viognier grapes were planted along with Merlot, Zinfandel, Cabernet Sauvignon and Riesling. Soon, the Linkogles began selling some of their grapes to local wineries. When the resulting wines started winning awards, the family considered opening a winery of their own. In 2002, Carl Key, owner of the Keyways Winery, convinced Les Linkogle to open his own winery and wine tasting, which he did. From 2002 until 2007, the family worked towards making their lifelong dream a reality. While completing various permitting processes and inspections, the Linkogles worked diligently on perfecting their wines and preparing a first-class estate winery. Since their grand opening in 2007, the winery has charmed all who visit to enjoy wine tasting. “We welcome everyone from the wine novice to the wine connoisseur seeking premium estate wines. Our story begins when founder, Jim Carter, was an eight-year-old growing up in Ohio. He would gather seeds from the maple tree outside his home and plant them in his relatives’ yards. This was an early indication that Jim loved digging in the earth and watching things grow.
In 1981, Jim’s father introduced him to a pristine region in Southern California with views for miles of the valley below. Perhaps he reminded Jim of his love for growing things as he encouraged him to purchase 400 acres here, which would later become our award-winning vineyards in the Southern California Temecula Valley.
In the mid 1990’s Jim was at the movies, watching “A Walk in the Clouds.” The classic vineyards that set the scene reminded Jim of his Southern California land. And the story of our Temecula winery resort and spa truly began.
Jim analyzed the water, soil and climate. Finding the conditions ideal, he started digging in the earth once more. He planted and nurtured the finest grapes with his own hands and the help of a hard-working team. Expert winemakers joined the team to create the wines that would establish the Temecula winery’s reputation. Becoming a vintner inspired another chapter in Jim’s story: building South Coast Winery Resort & Spa. Complete with villas, a restaurant and a spa situated in the middle of 63 acres, his story continues to grow, much like the vines he first planted.
As Jim tells it, “I wanted to share the complete wine country experience. Guests not only enjoy the finest wines paired with the finest foods, but they stay in a private villa right in the middle of a vineyard. We are Temecula Valley’s only full-service winery-resort that gives them a glimpse of our lifestyle in one of the most beautiful places in Southern California.”
It’s Jim Carter’s unbridled spirit of adventure that has allowed his Southern California Temecula Valley winery resort to garner over 2,000 distinguished awards and medals for the grapes it’s grown and wine it’s produced. In June of 2016, South Coast Winery broke records with its fourth win in the California State Winery of the Year Wine Competition. South Coast Winery brought home the first California State Winery of the Year award to its Southern California Temecula Valley home in 2008 and then again with a back-to-back win in 2009. It earned the top title in the California State Wine Competition again in 2013.
It was in 2015 that Jim decided to once again create a Southern California Wine Country destination with the passion project which would become known as Carter Estate Winery and Resort. Situated on 109 areas of pristine California Certified Sustainable Vineyards, Carter Estate Winery and Resort is an ideal setting for your relaxing stay in wine country. Chapter 1: Laying Roots in Argentine Soil
The passion that exists within every bottle of Doffo wine originates from their Italian ancestors who immigrated to Argentina in the early 1900s. Marcelo’s grandfather, Bernandino, settled in Pampas, Argentina where he grew soybeans and corn and raised cattle. Marcelo grew up on that land, and it was there that his love and dedication to the art of cultivation began.
Chapter 2: One Man’s American Dream
As a young man, Marcelo immigrated to the United States and began a new life journey. In 1994 he visited the old country in the northern region of Turin, Italy and discovered that like every good Italian, his great uncle still made wine the old-fashioned way in his basement. Marcelo returned home anxious to try his hand at winemaking, creating his first batches in his garage. By 1997 he had expanded his knowledge and developed his skills as a winemaker and was awarded the silver medal from the Orange County Wine Society.
This experience and honor sealed his fate. That same year he purchased an old cattle ranch in Temecula, California, complete with an historic one-room schoolhouse. The schoolhouse reminded him of a similar place he attended as a small child in Argentina. Starting with bare property, Marcelo painstakingly prepared the soil and installed trellises and irrigation lines by hand. He then planted his first vines of Cabernet Sauvignon and Syrah with a small percentage of Petit Verdot and Cabernet Franc. Four years later, Marcelo was proud to introduce his first wine, calling it “Mistura.”
Marcelo’s philosophy has always been that good wine making begins in the vineyard. From hand-planting each vine to the meticulous daily attention, Marcelo, his son Damian, and their crew take great care to produce intensely rich fruit that truly expresses their commitment to making world class wine. Doffo Winery produces small batches of wine in comparison to many other wineries in Temecula Valley, and the attention to detail that this affords results in bold, complex wines.
Chapter 3: The Next Generation
As the son of Marcelo Doffo, Damian grew up with farming and wine in his blood. In the early days of winemaking in the backyard, Damian would help out by washing bottles for 10 cents apiece. That was long ago, and thanks to his father’s mentoring he has since developed into a promising winemaker. Damian developed a sophisticated palate in his years as Marcelo’s assistant winemaker, but it was his father’s teaching that expanded his knowledge to include all aspects of owning and managing a winery and vineyard. After graduating from Cal Poly Pomona, Damian cut his teeth in corporate sales before returning to the winery as General Manager. Now a leader in the up-and-coming wine region, Damian sits on the Temecula Valley Winegrower’s Association Board of Directors and helps guide this coalition of winemakers as they forge ahead into the future.
As the winery has grown over the years, so too has the need to provide an exceptional experience for visitors. Marcelo’s daughter, Brigitte, serves as Tasting Room Director, and under her direction newcomers and longtime members alike are welcomed to an elegant and inviting space where the wine tasting experience is at the forefront.
Marcelo’s daughter, Samantha, serves as Events Director and has turned Doffo Winery into a true destination in Temecula Valley. In addition to coordinating weddings and other private events, Samantha continues to keep Doffo Wine Club happenings fresh and original.
After decades of blood, sweat and tears put into building one of the great wineries in Temecula Valley, founder Marcelo Doffo has stepped back from daily operations. He has entrusted his life’s work to his three children: Brigitte, Samantha and Damian. The next generation has accepted their father’s charge to continue his legacy by producing fine wine and ensuring that the doors are always open to those who seek it.
Chapter 4: MotoDoffo
The Doffo family’s passion for motorcycles can be traced back to Marcelo’s childhood in Argentina, where he first fell in love with the imported European motorcycles that were becoming popular at the time. Marcelo moved to the United States in the mid 1970s and eventually opened an auto body shop, Doffo Auto Body, with his brother, Jorge Doffo. Here his eye for perfection was put to good use and he developed his skills as a restorer. After establishing Doffo Winery, Marcelo set out on a quest to find and restore those very motorcycles that mesmerized him as a child. In the years since, the MotoDoffo Vintage Motorcycle Collection has grown to include nearly 200 motorcycles and scooters from around the world and attracts moto enthusiasts and wine lovers alike to the MotoDoffo Barrel Room housed on the winery grounds.
What began as a small collection of old bikes quickly evolved into something more. Over the years, Marcelo and Damian paid tribute to their favorite sport by creating an annual MotoDoffo wine, a Malbec-forward red blend that was always a best-seller. Just as he did with the family business, Marcelo passed on his love of two-wheeled machines to his children. Now the Doffo family can be found riding around Southern California or even racing vintage motorcycles at AHRMA events.
With growing interest in the collection, the wine, and an expanded apparel line, the Doffo Family decided to create MotoDoffo Wines. No longer limited to a single red blend, winemaker Damian creates four unique red blends and one white blend each year. In addition to holding some delicious wine, each bottle of MotoDoffo features original artwork commissioned from some of the motorcycling world’s most renowned artists. The family’s passions collide to form the MotoDoffo brand, whose motto is “Wine Art Moto.”
Chapter 5: 25 Years in Temecula
2022 Marks 25 years since Marcelo purchased that piece of land of Temecula Valley. He could not envision then that it would one day be home to one of the region’s premier wineries, but he was ultimately rewarded for the courage required to start a new business from nothing, the years of hard work in developing the vineyards and the winery, and the passion poured into every bottle of Doffo wines.
Now, as the second generation of Doffo family runs the daily operations of the winery, the third generation begins to get involved. As Marcelo puts it, “As amazing as it has been to watch my kids take over and run the winery, it is even more special to see my grandchildren step up. They are the torch carriers, and I am very proud.”
Winemaking is, and has always been, our primary endeavor. Our philosophy is that bigger isn’t better, and instead have decided to keep our operations small in an effort to deliver powerful wines while offering excellent customer service and Wine Club satisfaction.
As the mission statement on the back of our bottles says: “Family unity is our priority, nurturing the soils of our vineyards is our legacy, and handcrafting exceptional wines is our passion.” We raise a glass to everyone who made this first 25 years possible and look forward to the next 25! Experience peace and serenity while drifting over vineyards as the sun rises over the mountains. Take flight with the birds and observe lakes, citrus groves, vineyards, wineries and estate homes from your unparalleled view in the air.
Your adventure begins at sunrise as cold air inflates your beautiful seven story hot air balloon. You are invited to participate or sit back and observe the process. During the one-hour ride, local points of interest are identified, and questions are encouraged. While riding the currents, it is not uncommon to spot rabbits running through the vineyards and even an occasional coyote. Flying above this spectacular landscape affords a once in a lifetime experience. Once back on the ground, you will toast your successful flight and new status as “aeronaut” with champagne, orange juice, and a souvenir certificate of flight.
Tours are offered seven days a week, weather permitting, year-round. Scenic flights are 60-75 minutes in length, however plan to spend up to three hours for your entire ballooning excursion. - The Temecula Valley Unified School District is located in Riverside County. The Temecula Valley Unified School District covers 213 square miles (north to French Valley, south to the San Diego County line, east to Vail Lake, and, west to the Temecula city limit. The Temecula Valley Unified School District began operations as a unified school district in 1989. Currently, there are eighteen elementary schools, seven middle schools, three comprehensive high schools, one continuation high school, one independent study high school, one virtual school, two charter schools, and one adult school in the Temecula Valley Unified School District, for a total of thirty-three schools. The Temecula Valley Unified School District also conducts a childcare program called BASES at various elementary school sites. The Temecula Valley Unified School District received voter approval of the $165 million dollar Measure Y Bond in November 2012. Collectively, TVUSD’s strategies for achievement are developed and led by our five members of the Governing Board who are responsible for setting our institutional foundation and policies. Together, we have a collective purpose, vision, and goals. During the summer of 2016, the Governing Board revised the goals for the district and defined 6 key priority areas to guide us as an organization.
Under each priority there are measurable standards, performance indicators, and benchmarks that can be used to determine the district’s progress towards meeting the goals.
Priority #1 – Curriculum & Instruction
Our students will demonstrate academic growth and the proficiencies needed to meet their post K-12 goals.
1. There will be an increase in the percent of TVUSD students who qualify, are admitted, and prepared to succeed in a college program.
2. There will be an increase in the percent of TVUSD students who are prepared to enter the workforce upon graduation.
3. There will be an increase in the percent of students who demonstrate proficiency or higher for all district, state, and federal performance standards.

Priority #2 – Involvement & Connections
Our students will be provided relevant opportunities that connect them to their school as well as significant adults to allow them to pursue their academic, career, and personal interests.

Priority #5 -Fiscal Responsibility
The Board’s goals in the area of fiscal responsibility reflect the need to be prudent during times when the state and federal government allocate reasonable funding to public education so that resources are available to address the district’s needs during times of economic slowdown.
1. The Governing Board will maintain a 6% reserve for economic uncertainty (3% required by the state and 3% required by the Board).
2. The Governing Board will maintain a positive budget.
3. The district will observe generally accepted accounting practices (GAAP) and stay current with requirements under the Governmental Accounting Standards Board (GASB) in order to ensure that annual independent financial audits are positive.
4. The district will maintain a position control system that is able to account for all approved positions and to prevent unauthorized employment prior to Board approval.
5. The district will maintain a strong credit rating in order to minimize the cost of borrowing when issuing bonds or other debt measures.
6. The district will use a model/process to establish priorities for new funding and/or reducing expenditures.
